Yemenite Zehug – Original Recipe

 

Dry ingredients:

3 ½      T whole black pepper

1          T whole cumin seed

1 ½      T whole red [chile, jalapeno] pepper (VERY HOT)

8 – 10      whole cloves

8 – 10      cardamon seed

 

grind to fine

 

Fresh ingredients:

1          T   coarse (koshering) salt

2                medium green peppers

¼         lb.  Italian hot pepper

2                heads of garlic

1                bunch of cilantro/Chinese parsley

 

Add each ingredient in a blender or food processor and liquefy.

Add to ground spices.

Refrigerate.
